Tasty Coffee Filling For Your Next Cake

It is not necessary to use the same filling for your cake all the time. So here is your recipe for a Coffee Filling for your next cake:

Ingredients:

  • ½ Cup of sugar
  • 6 Tablespoons of cornflour (cornstarch)
  • A pinch of salt
  • 1.2 Cup flour
  • 3 Eggs
  • 1 Teaspoon vanilla
  • 1 Tablespoon butter
  • 3 Cups of milk
  • 1 Cup very strong coffee

Method:

  1. Mix the sugar, the flour, cornflour and the salt in the top of a double boiler
  2. Add the mixture of boiled milk and coffee
  3. Stir and boil slowly until thick, keep boiling for about 15 minutes stirring every now and again.
  4. Beat the eggs
  5. Add a little of the hot mixture to the eggs and then add the eggs to the hot mixture and boil another 5 minutes
  6. Let the mixture cool a short while and then add the vanilla

Of course this filling is also suitable as filling in a pie crust. Blind bake the crust until done and add the filling when it is cool.
