Old Fashioned Madeira Cake Recipe

Madeira cake is basically a butter cake and all that creaming of the butter and sugar can really be a lot of work if you do not have an electric mixer, such as one of the KitchenAid Artisan 5-Quart Stand Mixers. With a mixer it becomes very easy and produces a really tasty cake.
Old Fashioned Madeira Cake Recipe
Ingredients:
- 1/4 cup cornflour
- 2 cups of flour
- 1 cup sugar
- 8 ozs butter
- 4 eggs separated
- 11/4 teaspoon baking powder grated rind of one lemon
- pinch of salt
Method:
- Preheat the oven to 375 degrees Fahrenheit
- Cream the butter and sugar together
- Add the egg yolks one by one beating well after each egg yolk
- Gradually and the flour
- Add the lemon rind
- Fold in the beaten egg whites
- Bake for +/- 45 minutes until done, the cake is ready when it springs back after a light touch to the top
Really getting the hang of this Madeira cake may take a few times, but it is well worth the effort. The mixing is child's play with one of the KitchenAid Artisan 5-Quart Stand Mixers.
