Who said you cannot eat cake for breakfast? This apple coffee cake recipe is quick and easy to make with one of the KitchenAid Artisan 5-Quart Stand Mixers, yet with the applesauce and walnuts and is quite filling and it will give your family a nice start for their day.

What You Need:

  • 1/3 C of brown sugar, packed
  • 1/2 C walnuts, chopped and divided
  • 2 C of baking mix
  • 1/2 t ground cinnamon 
  • 1/3 C of milk
  • 1 C chunky applesauce

How to Make It:

  1. Spray an 8 inch microwave safe dish with a non stick cooking spray.
  2. Mix the brown sugar and 1/4 C of walnuts together in a small mixing bowl and set aside.
  3. In a separate bowl mix together the baking mix, remaining walnuts and the cinnamon.
  4. Pour the milk into the mixture.
  5. Add the applesauce and mix with an electric mixer on low speed for 30 seconds.
  6. Spread the batter into the prepared pan.
  7. Sprinkle the top with the brown sugar mixture.
  8. Microwave on high for 8 minutes or until the cake springs back when lightly touched. 

Makes 8 servings

This coffee cake is a snap to put together.  Instead of topping your coffee cake with brown sugar and walnuts try mixing 3 parts sugar and 1 part cinnamon together.  Sprinkle over the top of the cake just before microwaving. 

Of course, in the place of the apple sauce you can use any other pureed fruit. Keep in mind it has to be moist and the applesauce helps to make this cake moist and tasty.
