Peaches and Cream Cheesecake Ice Cream

What You Need:

  • 1 C of milk

  • 1 1/4 C + 3 T of sugar, divided

  • 3 egg yolks, beaten

  • 2 C of heavy whipping cream

  • 2 t vanilla extract

  • 2 (8 oz.) pkgs. cream cheese, cubed

  • 1/2 C peach nectar

  • 4 t lemon juice

  • 4 fresh peaches, peeled and chopped

How to Make It:

  1. Place the milk into a small saucepan positioned over medium heat.

  2. Heat the milk until it reaches 175 degrees.

  3. Stir in 1 1/4 C of the sugar until completely dissolved.

  4. Place the egg yolks into a small bowl and add 1/4 C of the hot milk mixture.

  5. Whisk until well combined.

  6. Whisking continuously pour the egg mixture into the hot milk.

  7. Reduce the heat to low and stirring continuously, cook the mixture until it coats the back of a metal spoon.

  8. Remove the pan from the heat and immerse in ice water for 5 minutes.

  9. Transfer the custard to a mixing bowl.

  10. Place the whipping cream, vanilla and cream cheese into the blender.

  11. Cover and puree until smooth.

  12. Pour the mixture into the cooled custard.

  13. Stir the peach nectar and lemon juice into the custard until blend in well.

  14. Cover and chill overnight.

  15. Fill the cylinder on the ice cream maker and freeze according to the directions for the maker.

  16. Place the peaches in a bowl and sprinkle with the remaining sugar.

  17. Chill the peaches, stirring often, until ready to add to the ice cream.

  18. When the ice cream maker is finished, drain the juice from the peaches and add them to the ice cream.

  19. Ripen the ice cream for 4 hours.

Makes 2 quarts
