My family loves omelets. We do not only have them for breakfast, but we very often enjoy them as a light supper on a weekend night as well. This hash brown omelet recipe involves some chopping, but by using a food processor, such as one of the KitchenAid 700-Watt 12-Cup Food Processors, it should not present a problem.

So, try this recipe and spoil your family with something special for breakfast.

Hash Brown Omelet Recipe

What You Need:

  • 1 onion, chopped
  • 1/2 C green pepper, chopped
  • 1 3/4 C frozen hash browns, thawed
  • 2 C egg substitute
  • 1/4 C of water
  • 1/8 tsp pepper
  • 3 slices of low fat American cheese

How to Make It:

  1. Spray a skillet well with a nonstick cooking spray and place over medium heat.
  2. Add the onions and green peppers and sauté for 5 minutes or until tender.
  3. Stir in the potatoes and cook 5 minutes longer.
  4. Place the egg substitute, water and pepper into a bowl and whisk until well blended.
  5. Pour the mixture over the onions and peppers.
  6. Cook 5 minutes and as the eggs set lift the edges so the uncooked egg can set.
  7. Lay the slices of cheese onto one half of the cooked egg.
  8. Fold the egg over the top of the cheese.
  9. Cook the omelet 1 minute longer or until the cheese melts.

Makes 4 servings

This omelet doesn’t need any added meat to be filling or to taste good. For something a little different add chopped tomatoes into the egg mixture before pouring it into the skillet.
