If you love grilling and the weather is unpleasant out, a good option is to grill inside. Best of all, you do not even have to have an inside grill as you can use your Cuisinart GR-4 Griddler. Here is a recipe that you can try this with:

Grilled Bean Burritos

What You Need:

  • 1/3 C of wheat berries

  • 3 C of water

  • 4 C green cabbage, grated fine

  • 1/4 C of onion, minced

  • 2 carrots, grated fine

  • 1 C of mayonnaise

  • 3 T of yellow mustard

  • 1 T of extra virgin olive oil

  • 1 onion, diced

  • 1 (15 oz.) can of kidney beans, drained

  • 2 T barbecue sauce

  • 1 t dried thyme

  • 1 egg

  • 1/2 C of bread crumbs

  • 1 t salt, divided

  • 1/2 t pepper, divided

  • 6 soft tortilla shells

How to Make It:

  1. Rinse the wheat berries well and drain.

  2. Place the wheat berries into a sauce pan and cover with the water.

  3. Place the pan over medium heat and bring the water to a rolling boil.

  4. Cover the pan, reduce the heat to low and simmer for 1 1/2 hours or until the berries are tender.

  5. Drain the berries well set aside.

  6. Place the cabbage into a mixing bowl.

  7. Toss in the carrots and minced onion until well combined.

  8. In a small bowl whisk together the mayonnaise, mustard, 1/2 t salt and 1/4 t pepper.

  9. Pour the mixture over the cabbage and toss to coat. 

  10. Cover and set in the refrigerator until ready to serve.

  11. Place the oil into a skillet over medium heat allowing the oil to become hot.

  12. Stir in the diced onion and cook 5 minutes or until a golden brown.

  13. Place the onion into the food processor. (One of the Cuisinart 11 Cup Pro Custom 11 Food Processors is ideal for this purpose)

  14. Add in the beans, barbecue sauce, thyme and egg and process until smooth.

  15. Transfer the mixture to the bowl containing the wheat berries.

  16. Add the bread crumbs to the wheat berries and stir until all the ingredients are blended together well.

  17. Sprinkle in the remaining salt and pepper and stir until blended.

  18. Form the mixture into 6 oblong burgers.

  19. Heat the grill to the medium temperature.

  20. Mist the burgers with a non stick cooking spray.

  21. Grill the burgers for 10 minutes, turning often or until crisp.

  22. Place the burgers on tortilla shells.

  23. Top with the cabbage mixture.

  24. Roll the tortilla to form a burrito.

Makes 6 servings

Top these burritos with your favorite type of shredded cheese, salsa and sour cream instead of the coleslaw if you prefer.  Allow the wheat berries to soak in water overnight to cut your cooking time down to 50 minutes.
