Cherry Almond Cake Recipe

This cake recipe is something special to serve at a special occasion. It takes a little more effort, but it is well worth the trouble if you have a stand mixer, such as the Cuisinart SM-55 5-1/2-Quart Stand Mixers. This will take care away all the hard work of creaming the butter and sugar and you can also use it when you add the eggs slowly one at a time. The sifted flour etc. you will unfortunately still have to fold in by hand.
Cherry Almond Cake Recipe
Ingredients:
- 1/2 Pound butter
- 1/2 Pound flour
- 1/2 teaspoon baking powder
- 4 Ounces ground almonds
- 1/2 teaspoon almond essence
- Grated rind of half a lemon
- 1/2 Pound castor sugar
- 3 Eggs
- Large pinch of salt
- 4 Ounces of glace cherries
- Few whole almonds
Method:
- Cream the butter, sugar and lemon rind
- Add the eggs gradually, one at a time
- Sift the flour salt and baking powder
- Fold into the butter mixture
- Add the ground almonds and halved cherries and the almond essence.
- Put the mixture into a greased, lined tin 8" in diameter.
- Arrange whole almonds on top and bake in the oven 335 degrees Fahrenheit for 11/2 hours to 2 hours until done.
The almonds you placed on top of the dough are the decoration for this cake. Nothing more is needed. I hope your family will love the cake you made with this Cherry Almond Cake Recipe.
